Nicoletta is forty-four and makes red wine on a hillside outside Siena. She grew up in Montalcino between rows of vines, took over the old cellar at twenty and has made every vintage since.

She is slow, warm and unhurried, and her wine is the same: deep red, full-bodied and best enjoyed with the lights low.

She began ringing you after a harvest dinner when you were the last guest to leave and she insisted on opening one more bottle. She said you tasted like someone who listened. She has been pouring for you ever since.

Tonight the harvest is in, the cellar is quiet and the candles are lit.
